Easy black bean soup recipe made with Great Lakes Burning River Pale Ale. A great recipe to throw in the slow cooker and fill up the house with some great aromas, before filling up your belly.
I call it Burning River Black Bean Soup, and in a nut shell, here it is:
Rinse beans (soaking in frig), then add to crock with everything else
One box vegetable broth (32 oz)
One bottle of ale (we used Great Lakes Burning River)
One red pepper, diced
Remaining orange pepper, diced
One onion, diced
4-6 gloves garlic, finely chopped
One Tablespoon ground cumin
One Tablespoon dried oregano
½-1 teaspoon course salt
½-1 teaspoon pepper
Half can chipotle pepper on adobo sauce (chili chopped)
Set crock on High for 2-3 hours, then turn down to Low. Taste after a few hours. Add remaining can of chipotle pepper in adobo sauce (if more spice is needed) or salt/pepper if needed.
