Oatmeal Stout Beer Marinade Recipe

  • 1 bottle of Oatmeal Stout. (Probably any brand will do but I used Sierra Nevada’s Beer Camp Oatmeal Stout)
  • About 1/2 cup red onion, diced
  • About 1 tbsp crushed garlic
  • 3 tbsp olive oil
  • 1/3 cup of sugar
  • 2 tbsp molasses
    (note: you can probably double up the sugar amount with brown sugar and forego the molasses.)

  • Dash of thyme
  • Dash of black pepper
  • About 2 tsp salt
  • 7 drops of tobacco sauce
  • Just a tad (about 1/8 tsp) of Dave’s Insanity Sauce, and considering this, probably the Tobasco won’t make a damn bit of difference so you can leave that out. :)
  • 1 tbs apple cider vinegar

Heat up a skillet, add olive oil and let it warm up. Sizzle your onion and garlic for a few minutes, then pour in the beer. Let that mix simmer for a bit and the alcohol will begin to cook off. Add the rest of the ingredients and stir occasionally as it simmers. I simmered mine for, oh, just about 15 minutes or so. I get distracted so it was probably more like 20 minutes. The beer will reduce and you’ll have a nice, aromatic sauce going.

Add the vinegar last and stir. I had to ad some water too (about 1/4 cup) because I probably left it simmering for more like 30 minutes. Was probably Face-booking or something.

I used a bison steak, but any good cut will work just fine. Pick your favorite. Trim off any fat on the edge and put the cut into a large plastic ziploc bag (or another container you use for marinading). Let the marinade cool a bit and then pour it over the steak.

I fridged my steak for 24 hours and it really does have a great flavor. Use your judgement. I would definitely shoot for at least 4 hours for the marinade to do it’s thing.
